I went back home to Miami for spring break to escape the dreadful D.C. weather and catch up with my family. If we’re being honest, I also went back home to tan. So while I was wrapping up a tanning spree on South Beach, I walked down Washington Avenue where I stumbled upon Insomnia Cookies. Mind you, I’ve wanted to go to Insomnia for forever (ironic because I suffer from insomnia) so this was the perfect opportunity.

Review: If there are three dishes in life that I can critique as an expert, they are mac ‘n cheese, french onion soup (not so much anymore because they’re made with beef broth) and ice cream sandwiches. That being said, this was one of the most absolutely incredible and absurd ice cream sandwiches EVER. The cookies were fresh out of the oven with gooey chocolate chips and I could tell the ice cream was homemade. When squished together, the runny ice cream and hot cookies melded together and practically turned into an ice cream cookie soup. This might sound repulsive, but any ice cream cookie sandwich aficionado understands that this is what the experience should be like. Word of advice: don’t eat this on a first date.

When can I come to Miami to visit and try these? They look like the amazingly scrumptious cookie sandwiches we had at the Young Life camp I used to go to up in NY. Chocolate chip cookie sandwiches like these need to come to Georgetown..
OMG yes! So incredible. The Baked & Wired ice cream sandwiches have nothing on these 🙂 but insomnia cookies are in nyc, too!
